All of our non-commercial usage knives are backed up with free sharpening. When your knife comes in to be sharpened, we will inspect, clean, and polish your knife. Minor repairs from regular use are included in our free sharpening service. Major chips from misuse may incur a repair fee.
All of our sharpening is done by hand on Japanese whetstones.
Every time you sharpen a knife you remove steel. Slowly the cutting edge creeps towards the spine. In turn, the steel behind the cutting edge gets thicker. Eventually the cutting performance of the knife will decrease to a point where the blade needs to be thinned to return to optimal performance. We will assess your knife when it comes in for a sharpening service.
Please do not use pull-through or electric sharpeners. There are very few models on the market that will not cause damage to the blade.
For edge maintenance we recommend a clean leather strop. A honing rod or steel can be used if done very carefully and gently.
